François Doll : Il Cuoco Galante

For his new restaurant, Il Cuoco Galante, located in the 9e arrondissement of Paris, gastronomy enthusiast Philippe Baranes - who already has the Parisian addresses Dessance and Braisenville -, appeals to the interior designer François Doll. As a result 55 square meters place breathing craftsmanship, in which the kitchen is at the center of spatial design.

The kitchen is not only what one has on the plate, but also the place where the food is prepared. Since this space is at the heart of a restaurant, why exclude it from the main room? This is the question that Philippe Baranes and François Doll were asked during the elaboration of Il Cuoco Galante.


Far from being reclusive in a secluded room, it becomes a central island made of oak wood with a white kashmir granite counter to which guests can settle and admire the skill of craftsmen since Pine stools tinted with walnut husk. Above, a suspended solid oak structure, inspired by the sculptures of Sol LeWitt, accommodates the dishes and delimits this "sacred" area without closing it. Both contemporary and authentic, it brings the elegant simplicity sought by the creator of the Italian bistro.

Arranged around this central space, the tables take up the mineral material of the bar while the chairs are made of light wood. The whole rests on a ground with the paving chalky and irregular honeycomb paving. The palette of natural materials is enhanced by a ceiling and walls green blue as well as credences in zellige green water. If the day, the place is illuminated naturally by the bay window oriented on the street; In the evening, minimalist light fixtures with incandescent light bulbs give a subdued and more intimate atmosphere.

Halfway between a rustic and refined setting, the interior of Il Cuoco Galante is the image of simple dishes, sublimated by the chef under the eyes of all.
